What will happen if I disconnect Temp. sensor?

I would like to see a real coolant temperature on my 95 9000 Aero.
I was thinking about swapping OEM sensor located on the drivers side of the engine and installing aftermarket one instead with the gauge. Whould disconnecting OEM one do any harm? As far as my poor knowledge of reading electrical diagrams tells me, it's just gives a signal (through ECM) to the dash gauge. It's the sensor in the intake manifold that sends info to the ECM about engine temperature and more critical then other.
Anybody has any input on that?
Thanks a lot!
It's been a while since I post here. Glad to be back.
