As the others have said, that is thermostat behaviour. A bit extreme, though.
When the car is cold, the thermostat stays closed, and the coolant in the engine warms up. When it warms up enough, the thermostat opens, and coolant from the radiator rushes in. Since that coolant has been sitting in the breeze, it's COLD, so the mix drops the temp rapidly. The cycle continues until all the coolant reaches about the same temp.
As to midway's idea of venting the coolant reservoir, you can do that with the engine running. Just DON'T do it with the engine hot. After the engine has started and idled for a couple/five minutes, you can unscrew the cap safely. It's only after the coolant has reached full operating temperature that opening the system is dangerous.
About 50% of the time when I change the thermostat, I see some pretty wide swings for the first week or so, and then it calms down. Other thermostats just 'come on line' smoothly. Yours seems a bit excessive, but see if it calms down after a few days. If not, I'd replace it. You may have a sticky thermostat. Yes, it is new, but new parts can be bad, too. How long you'll wait depends on how adverse you are to replacing the thermostat again so soon.
