On the AMM, my guess is that it was plugging in straight from the factory and never set. The car will run. Whether it runs happily or not depends on the engine.

In terms of the engine being enriched at cold, cold is relative. 68 degrees F might be comfortable for you, but it still counts as cold for the engine. At idle, there is the most enrichment at 32F, less enrichment at 68F, and none at 176F (warmed up). And roughly speaking, 3200 ohms corresponds to about 57 degrees, which isn't that far off from 68.

If you're wondering if you're running rich, then pull the spark plugs. No guessing there - they don't lie. A faulty temp sensor does tend to result in a higher than normal idle due to extra fuel.

We've gottens so far down the thread that I don't remember what your car's original problem is. I assume it's a poor idle when cold. That would point to a vacuum leak or a bad AMM. But since you have an adjustable AMM that still at the factory setting, I suspect you need to adjust it. I'd do that before replacing it. It's strange that you say the adjusting screw is stuck - they usually turn quite easily. Are you sure you've found the adjusting screw?

Another thing to ask - what is the dash number on the AMM. For your car it should be -005. Later model AMMs are not (easily) adjustable - there is an anti-tamper on the screw and it is set from the factory at 380 ohms. But that is for different LH systems than yours.

Check the plugs, and go from there as to what they tell you. Check all the plugs. For example, you might have one injector that is sticking, causing one cylinder to run rich, or is lazy, causing one cylinder to run lean.
