Physics: we can approximate the volume of water vapor produced when water is boiled by using an ideal gas model. At STP (standard temperature pressure = nice day) a mole of gas is about 22 liters. The weight of a mole of water vapor would be 18 gms (16 for the O2 and 2 for the H).
Simply put 18 grams of H2O turns into about 22 liters of water vapor.
So 1 gm of H20 vapor is about 2.4 liters in volume.
An expansion by a factor of 2,400.
Basically, a small amount of water can cause a lot of gas.
This affects you even if the water doesn't boil. When the tires heat up, the air heats up and it holds more water. That extra water adds volume.
So the trick is dry air for more consistent pressure.
Nitrogen comes cheap and is absolutely dry. It's expensive to remove all the water from ambient air.
