I had the same situation (full JT System with rotted pipes after the cat). JT used to sell a cat back system, which would have been ideal, but it is no longer available. My car had an expired inspection so I had to do something quickly.
The the stock exhaust IS an odd size, 60 mm, which is around 2 3/8, I ended up getting a 3 inch (inner) to 2.5 inch (outer) reducer, then getting a short piece of 2.5 inch pipe and putting it inside the reducer. The stock pipe went inside the 2.5 inch pipe, after I cut off the flange. The wall thickness on the stock pipe must be around 1/16, for this to have worked. I wrapped the whole mess with a 2.5 inch stainless steel band clamp. Not pretty, but it didn't leak.
When I checked the local shops, they didn't think they could make the bend over the axle with a 3 inch pipe without crimping the pipe. I toyed with putting a 2 1/2 inch cat-back system on the car (1991), but the cost, $400, and the waiting time for the system to arrive didn't seem worth the effort.
Expect to spend some quality time with your reciprocating saw and get lots of rust flakes in your hair.
