I have had to replace the oil pressure sender on three of my cars: C900 (twice), Alfa Spider, 9000. It's a cheap $4 part the is subject to a lot of abuse, i.e. hot oil under pressure, so they can and do fail. If you don't have an oil pressure gauge that you could hook up (I don't), you could try installing a new part and seeing if you get the same slow response - cold oil should have a LOT of pressure unless it's not being picked up properly.
