I mean replace them if you mangle the old ones getting them out. A lot of people end up using big vice grips to get rusty ones out which damages them, or at the least the hex is so rusted and rounded you don't want to put them back in. If they actually snap, then you're screwed and need to drill them out (good luck) or replace the caliper at that point. If I were in your shoes I'd have a reasonable crack at them with penetrating fluid and a 6 point deep socket and if that doesn't do it with reasonable force them not worry about it. Fresh fluid is great and will keep your calipers going longer, but after all most people never change it and I'm not sure it's worth the cost and hassle of putting in two crummy rebuilt calipers just for the piece of mind of fresh fluid.
