Both sensors work the same way — high resistance when the coolant is cold, low resistance when the coolant is hot.
This is not to say that their operation is identical. I have no way to know other than testing a pair of good sensors, and I'm not that curious.
Splicing would put you in uncharted waters as far as I know. It's hard to be patient, but waiting for the back ordered part is your safest bet.
