Fair point, but the battery would have been pulled for the head gasket job which would have reset the ECU. Honestly, this is likely to be a tough one to track down. A vacuum leak seems pretty likely if the car runs well other than at idle. Check all the hoses really carefully, as well as the intake gasket. If you get really desperate, try a shop with a smoke machine. The idle control valve could have been messed up moving it around too. Try giving it a good whack with something hard to see if that cures the idle hunting.
