Personally I think I'd go with silver, it probably most closely resembles the stock calipers and will look the best as the paint fades or if it flakes off as home caliper paint jobs often seem to do. Black to match the car would be tempting too but I'm not sure if it would hold up as well.
Are your calipers new or rebuilt? New ones seem to have some sort of coating that at least lasts a little while whereas the rebuilt one I put on my 9k rusted pretty much instantly. Either way a coat of paint probably isn't a bad idea.
Incidentally I needed new rotors on my E36 BMW and tried some inexpensive painted rotors. It's been about 6 months and they've held up really well, it's nice not having the rotor hub and edges get all rusty.
