Good to see you last weekend!
Unless you can see some significant damage/wear I am not sure that there is really any reason to replace the intake valves. For the exhaust, hopefully you have the "later" version (Thicker throat and thicker rim). The valve seats are hardened steel (maybe "stellite"). You should definitely have the valve seats cut to the "later" profile (two angle only, nice wide contact area). Also, once the seats are cut and the valves installed, the tops of the valve stems should be ground down to uniform height (height which allows you to start your "new" head with the thickest adjustment shims. Send me a note and I can send you copies of the documents when I get home this weekend.
I am all over this because I just got my new head back from the machine shop, so it's all fresh in my mind.
