Sorry I'm late in responding (I can't check the message boards from work anymore).
I have a '76 that I drove (and raced) for a while without the power steering hooked up. It wasn't hard to turn. I hooked the power steering back up but I used a different pump (from a B motor 900, forcing me to also use an alternator bracket from the same 900) and a different rack than what was in there (the PO had pulled the lines out, filled the area where the PS fluid goes in the rack with grease and capped it off so I had to use a new rack without grease in it).
We have a 900 at home that has been driven probably 50K miles with the PS belt removed. We just make sure to keep fluid in the reservoir (the pump dosen't leak when its stationary). You should be fine so long as you keep fluid in the reservoir (and thus, in the rack). Good luck!
