Hi Brently,
When I too the head off of mine, I just took it to the machine shop - bearing tower and cam still attached - they did the rest. All told, it cost $150 to have it cleaned and pressure tested, and checked for warpage, and check the valves for scoring and proper clearance.
I won't hurt anything to take the cam and tower off, but it's only going to take them about 1 minute to do the same thing.
If you do take the cam off, unless you already have a valve spring compressor, I would leave the valves in - the cost of having them remove the valves isn't going to be as much as buying the compressor.
Unless you're set on doing the disassembly yourself, I would find a good machine shop and let them take care of it.
