The cam is what opens and closes the valves in the cylinder head- It spins half as fast as the crank. There are eliptical lobes for each valve, and as it spins, it pushes the valve open, and lets each valve's spring pull itself closed again. The grind refers to how big those lobes are: the bigger the lobe, the more the valves open, the more air fuel you can get in, and the more exhaust gas you can get out. When a cam has bigger lobes, it is often called a "hot cam." Does that help any?
