This sounds more like a problem of fuel delivery to the carb than a carb problem. If the fuel pump cannot deliver enough fuel to satisfy maximum demand, turning up the regulator will not help. You could have a restriction upstream or downstream from the pump, such as a kinked line or plugged tank sock, or a failing pump. The best way to get a handle on this is to tee in a fuel pressure gauge between the pump and the carb and tape it to the windshield or run it into the cabin, and see if pressure drops radically when the problem occurs. If this happens only when hot, you could also be looking at a vapor lock issue. If you are running the stock mechanical pump, switching to an electric pump and rerouting fuel lines away from engine heat may help.
