Saying it only gets to "n" is meaningless. I really hate temp gauges that don't really tell you the temp as you really don't know if thats hot enough to be efficient or not. You also don't know (or I don't anyway) what the degree spread across the gauge is.
Anyway a new radiator won't make the engine run too cold, a bad thermostat will. The thermostats whole job is to keep coolant in the engine until the engine is warmed up and then shed the extra heat into the radiator. If the thermostat is opening too soon then it should be replaced with one that works correctly.
I don't really know enough about the subject but I might speculate that Gary had overheating problems and went to a cooler thermostat to try to help that. Once he got a radiator capable of dealing with his heat load he needs to go back to the correct thermostat to keep his engine running in the right range. Thats just a theory though.
