He quit. Top end of 3rd gear in the viggen should have put you in the 70's if not more. If you were taking off from a red light I'll assume that 70's is not a good thing to do, and the guy in the mustang probably had more sense then to keep on going, especially since you hit another light.
I've had both cars ('95 stang, '01 viggen), and don't think the viggen has anything on the mustang in terms of acceleration from a stop. Depending on the year, my guess is its a tad quicker to 60, and about neck and neck to 100 - stangs pulls away to 60, and the viggen catches up at 100. You can take solace in the fact that the guy in the stang probably realized the viggen is faster than it looks, and couldn't prove anything if he tried again. But, your viggen wouldn't blow away a late 90's mustang.
I've tried to convince myself that the viggen is super fast, but in this day and age, there are tons of cars that can keep up with the viggen in acceleration from a stop. Mid 6 to 7 second 60's are no big deal anymore (G35, acura s-cars, etc). Just enjoy your car, safely.
