The engine control Unit (ECU) will retard timing, etc. to compenstae for lower octane level in the gasoline. The main thing that will happen will be a loss of available power from the engine.
While this may not be a ;roblem for you on a long highway trip, also think the safety factor of having power on demand. What would happen if you needed to pass a semi-truck being buffed by wind, or get out of the way of someone improperly merging onto the highway?
Personally, I just buy premium (at $2.09 for Chevron Supreme vs. $1.79 for Chevron Regular here in Seattle) and figure it $2-$4 per fill-up is a minor amount to pay for having the power be there when I want it.
