most problems with the v6 arise from improper maintenance, that is, not getting the belt changed at the regular interval. With that said, there have been reports of belts snapping before due for a change, and with bearings in the belt tensioner going bad. Both result in a new engine. THe new procedure is to change the pulleys when changing the belt.
The valve cover gaskets, if done right with a lot of black permatex goobered on, should last a reasonable (30k miles if not more) time before needing replacement. Consider it routine maintenance and don't sweat it, DIY on a saturday afternoon.
Remember, its a used car and will have problems, and the dealer cannot vouch for its history unless they did it there.
However, a dealer sees more of these than we do here on the BB, and the fact that he's talking you out of a sale is concerning. Of course, he's probably trying to put you into a new car. Sounds like you trust him/her, and should probably heed the advice.
