If you tried running the engine without connecting the MAP sensor hose, the ECU will register a fault, and it will then be forever trying to recorrect for this fault even when the hose is reconnected.
Have you done the battery disconnect as suggested by JimN? This will reset the ECU and should clear your erratic idle. Worked for me.
That is, unless your MAP sensor is on it's last legs... I eventually had to change mine and those idle problems went away.
