The flush might have washed out some accumulated gunk that was keeping oil in place, although usually you see a visible external leak from such seal cleaning activities.
Two quarts is a *lot* in 500 miles. I'd put some white poster board under the car when you park it and look for leaks. I would think you'd see that much oil blowing in the exhaust if it was burning.
I'd also switch back and see if you can get it stable :-)
