Not sure what you mean by pedal being able to go to the floor easily. If it's actually reaching the floorboard, that's too much travel which means possible air in the system.
If the travel is "normal," one thing you might want to check is the surface rust on the disks when you double check the calipers. Look for surface rusting - especially on the inside of the disks. If you see surface rusting, it is likely a caliper getting hung. For example, on my 9-3 the braking was a little weak, but from the outside everything looked ok. Looking at the inner surfaces, I noticed surface rusting on the inside of the rear rotor. The rear calipers have two active pistons (as opposed to some design with one active piston and a sliding assembly), so the inner piston was seized and only the outer piston was pushing on the rotor when the brake was pressed.
Don't know of any "in car" way to test MC other than to swap it out, but others may have suggestions. I had an old 900 that was doing the same as well. Tried bleeding multiple times, tried swapping the MC, and nothing. Finally had to replace a caliper for an unrelated reason (I think I happened to strip the casting where the bleeder screws, but don't remember exactly), and it fixed the problem. The only thing I could think of at the time was that the caliper was leaking passed the seals/o-rings internally and so not putting enough pressure on the pads (there was no external leaking and no binding of the pads).
