Read your contract.
Unless you purchased some kind of special coverage, the measure of loss which the company will pay for is the market value of the vehicle. That is, what would it have sold for before the accident.
So, ask yourself how would the marketplace regard what third parties would pay for a 26 year old vehicle that was in good shape?
The opinions that would be persuasive usually come from dealers. 'Suggest you talk to a few informally, including the Saab dealer. What would the Saab dealer be asking for if he put a 26 year old vehicle out on his lot (rather than sending it to the auction, etc.)?
If this vintage Saab is what you want to drive, my guess is that your own reward would come from having a source for wear items on a similar Saab.
