On a few occasions the SID of my 2000 9-3 SE has zeroed itself spontaneously, without me touching any button. I reckon this is what happened in your case as well. When the mpg's are zeroed the average consumption will fluctuate a lot before enough miles have been driven.
No idea what the cause for the spontaneous behavior of the SID might be, though. In your case, had you reset the mpg's the previous time you drove the car?
