The car fist struck the chain link fence poles at high velocity, these triggered the airbags. The car then traveled further before striking the solid brick/stone church. During this additional travel distance the air bags partially deflated which left the seat belts as the primary restraint for the driver.
The driver's body was sheared in half during the crash, probably by the seat belt.
At least that is my theory as to why the driver's body did not remain intact. If my theory is correct then being a hard top of soft top wouldn't have made any difference. The windshield frame appears fairly intact which is surprising.
