Interior window fogging in cold damp weather

I drive an '02 9-3 hatch and when the weather gets cold and damp (rain/snow), I can get moisture on the inside of the windshield and hatch glass as well as the door windows. I've had to scrape the inside glass when it's below freezing too. The car's interior is dry when I leave it? I don't see or feel any wet carpets, door panels, windshield, seats, etc. Any ideas this occurs?
I noticed the interior fogging on the interior of a 2004-2007 9-3 convertible in a Home Depot parking lot a few months ago.
