Keep track of when the message comes on. If it comes on while accelerating, then the coolant level may be just low enough for the force to "push" it away from the sensor (picture it as if you were going up a VERY steep hill, where much of the fluid would move to the back of the reservoir). This only needs to happen for a millisecond as the sensor sets the message as a latch (i.e. the message stays on until cleared manually). I know this from experience.
At first glance, the level may look to be okay, but look more closely, it may be a slight bit low in the tank. If you find this to be true, top it up and keep track of it over time. If the warning message comes on again at a later date and you find the tank level to be low, then there is a leak somewhere and the sensor is just doing its job (trying to prevent a bigger problem from occurring).
