The thin metal bracket to the hard pip which bolts onto the stat cover will bend out of the way a bit to get the cover off.
If the temperature drops at highway speeds, the stat is defective and should be replaced asap. Condensation and acids can form in a cold engine.
The ECU hides normal fluxuations of engine temps from view, and pegs the needle at 9 o'clock. If the temperature gets out of a predetermined range, then the guage will show this.
