I had the same problem. Temp gauge went from 9:00 to cold and back again. Eventually it will spend more time in the cold if left unchanged(if it is an eroding sensor). Since this temp sensor feeds input to the cooling fans as well, your car may run hotter if left unattended since the fans think it's a cold engine. I replaced the coolant temp sensor and it fixed the problem. It is a DIY job but expect some loss of coolant(If you do not drain coolant beforehand).
