The coolant level is lower with a cold engine, and when you accelerate, the remaining fluid in the tank shifts away from the sensor. After things warm up, the level rises and the problem seems to go away.
Coolant levels need to be checked with a cold engine, so do that. You seem to be loosing some fluid. Retighten all of the coolant clamps, the smaller hoses are more leak prone. Start with the ones on the coolant tank it self. Remove the shroud over the throttle body, there are two small coolant lines on the TB. All gear type clamps are self loosening, as the rubber yields under the clamps and the clamping pressures relax over time.
