That seems like a very expensive quote. (I don't live in the US, so I don't know what things usually cost over there.)
What would be a good idea would be to get a breakdown of the quote into parts and labour, and your dealer's hourly rate. What I suspect you might find is that the parts themselves make up a small fraction, and that the rest is several days of labour taking out the engine.
Given that the V6 is a GM engine (it is similar to one used in the Vauxhall/Opel/Holden Vectra), it can't be all that different to working on a standard car. Do they sell the Vectra in the US? Clutches, flywheels and seals are pretty standard stuff for most mechanics too.
People who specialise in replacing engines for most makes and models should have the skills, or you could try a general mechanic - they are usually cheaper (but make sure they're big enough to sue if it all goes horribly wrong). Many may say no, but at that price, it's worth asking.
I don't want to depress you, but I had the clutch in my Holden Commodore (an Australian car) replaced for less than US$100. The gearbox just drops out the bottom - one of the many benefits of rear wheel drive.
