I had the same thing a few weeks ago. My coolant level was slightly low, just below the cold line when cold. I would get the low coolant warning just after I started the car and pulled away. The low coolant when cold mixed with acceleration would slosh the coolant to the back of the reservoir and expose the sensor at the front. It would trigger the message in the car. Once the car had warmed up, the message would not appear. I topped off the coolant and have not had this repeat itself. Check the coolant when the car is actually cold, and it is probably slightly low.
