We adopted a retired racing Greyhound about 6 year ago now. He's a brindle male and is now 8 years old. What a great dog. I can't say enough about what a docile creature he is. Great with the kids (4 and 1.5 year olds). Of coarse, like people, each dog has a different personality. Turbo is very calm (kinda' unusual for a Greyhound) and has no interest in running or chasing anything. He would rather avoid a cat that case it! :-)
The agency we went through (in San Diego) was Greyhound Pets of America. They went through a rather extensive interview process, which at the time seemed like a joke, but we ended up with a dog that fits our life style perfectly. So, I can't really comment on the agencies you mentioned, but the dogs are wonderful.
Be prepared for people to ask if your Greyhound is a whippet or any number of other breed. It is really amazing how many people don't know what a Greyhound really looks like. Oh, also be prepared for people to call your dog weird, ugly, anorexic and a lot of other names...
Also, it is somewhat of a misconception about the dogs needing a lot of exercise. They don't need any more excursive or "room to run" than any other dog. I walk Turbo twice a day and he is perfectly happy and healthy. Nor do they need any more room (in fact a Greyhound is happy in small areas, they are used to if from living in a kennel from their track days) than any other breed.
