Convertible is fine in the snow in my experience. The top certainly doesn't seem to be any different than a standard roof as far as warmth and treating it seems to help keep it in shape (I use some stuff I bought on the autofanatics web site.
I'll drive as low as 40 for short distances. The most fun was on a high 30's day with fresh snow and bright sunlight, going out to do my Christmas shopping. People just smile like crazy (or they think you're crazy) when you drive by.
