Not a complete expert on the technology, but I know this:
AMD 2.5GHz likely faster, but lower quality chip -- many swear by them
Intel 2.5GHz Pentium chip is highest quality, Celeron is similar, but less math processing (not a big deal).
Centrino - lower battery usage, decent speed put in the lightweight laptops. Not sure but they sell these as having better wireless connectivity, but I think that is marketing -- certainly all the Centrinos should have wireless built-in.
If you are going lightweight get the Centrino. I personally wouldn't by the AMD in a laptop, desktop maybe. The Intel Pentium chip is a nice powerful chip, but primarly in the heavier laptops.
I recently shopped for laptops and the best bang for the buck on the lightweight laptops with centrino were the Toshibas and Sony Viao. I am a big fan of Toshibas. Toshiba also had the best Pentium laptop as well. I have had 2 toshibas that have worked very well for me. I am typing on a Dell Latitude lightweight right now and I have had to replace every part so far with exception of the HD. Good thing I got the 3 year warranty;)
