I lived there for two years courtesy of the military, and right now it's on the top of my intended retirement list. I'll probably be in a one bedroom shack, but we'll be happy.
If you are planning on hiking, going down to Big Sur is the right thing to do. Just inland from the coast there are some amazing forests of enormous redwoods. Kayaking you have two options, downtown and the elkhorn slough. Downtown you will see plenty of sea otters and other wildlife, while north of town in the slough you will see more birds and plant life. Both are very nice.
Dining- depends on how much you want to spend. There are some great places, but they are expensive. There are also some great cheaper places as well. There's a little deli just outside NPS with great sandwiches that I used to hit for lunch a couple of times a week.
Have a great time- I'm hoping to get a weekend in this summer while in a military class in the Reno/Tahoe area.
