I hired mine done, spent the whole time helping the "professional" installer do the job (including providing him with the tools for the job), and felt real stupid for not doing it myself.

What held me back was concern that the natural gas pipe would have to be shortened/lengthened to mate with the gas valve elevation on the new unit. I don't own pipe threading equipment and didn't want to spend an entire Sunday making runs to Home Depot for a different length pipe nipple (these things always fail at the most inopportune times). Turns out the gas valve elevation above finished floor is a near standard specification throughout the industry!

Tools and equipment you will need:

Garden hose to drain out water (of entire hot water system, not just tank)
Tubing cutter to cut water lines above valves
Channel lock pliers and/or pipe wrench to remove gas line
Appliance truck to get old unit out of house and new one in
Two new dielectric couplings
Two new water valves for Cold In and Hot Out - assume old ones are shot, good time to replace
Two feet or so of copper tubing
Two repair couplings for copper tubing - these DO NOT have a dimple at half their length
New Pressure Relief valve if not included with heater
Propane torch, paste flux, and safety solder
Teflon pipe dope for gas line fittings

Sweat soldering copper tubing is easy if you keep it dry inside. Polish both parts of connection (outside of tubing and inside of fitting) with steel wool, smear with paste flux, heat fitting body with torch until solder is sucked into the annular space, remove heat and wipe with wet rag. I have never had a leak with sweat soldering but threaded fittings are a PITA to stop dripping.
