For your budget, Nikon, Canon and Olympus all have decent models in the 3- 4 megapixel range that will do the job for most uses. Get one that feels good in your hands, as Ari notes. And be sure to get one with a *bright* monitor so it is easy to use outdoors. And see if you can use a readily available, basic battery--like rechargeable AAs--so you never get stuck with low batts.
All these cams have a ton of features---that only gadget junkies ever use. The automatic mode in most cams is so good that all you need to do is point and shoot. Be sure to read the May (?) issue of Consumer Reports that has a good article on them.
Being an old 35 mm film camera guy, I strongly believe in getting one from a CAMERA maker (Olympus, Nikon, Canon, etc) as opposed to an electronics company (Sony, HP, etc). It's nice that the HP ones plug into a printer easily, but all you have to do with the others is pull the memory card and do the same. The *camera* takes the image and you want the best optics and other camera features to get the best image.
I have a Nikon CoolPix 950 that is about 4 years old and it still does fine, even though it is only 2.2 megapixels, as long as I don't print bigger that 4x6 and use top quality paper.
Digicams are great. Have fun looking and using.
