iTunes is a really good tool for music management, even if you don't use any of the other features (music store, ipod integration, radio, etc). If you do use iTunes, I recommend to keep all of the ID3 tags neat and clean and to add genres or comments to each song. That way, when you get a large amount of music ripped, it'll be easy to sort and find. Plus, and this is a fantastic feature of iTunes, you can create "smart playlists" which dynamically update by finding songs by any number of criteria such as genre, keyword, date - ex. "songs from the 80's", or "songs with the word 'death' in the title and the genre 'Gothic'."
I haven't experimented much with the "Apple Lossless" format but have read numerous good reviews of it. I usually rip at 192 AAC and find the quality is satisfactory for the car and even my "good" headphones (Grado SR-60). This is a very subjective judgement, you should experiment and find what you like.
As far as audiophile-dom, if you haven't checked out Stereophile magazine you might be interested in it. Entertaining, knowledgable writers and they try to review a variety of pieces from all budgets. Subscriptions are really cheap. I love to talk audio tweaks and have had some really great results with them.
