Why do some dealers hold onto cars so tightly?

I often see cars on eBay that are listed as new 03 and 04. No clearly, the warrantee has begun and the car has been put into service. So the dealer took the rebate and is still marketing the car as new. Shouldn’t there be some law against this? Why don’t these dealers just dump the car for a quick profit? Don’t they understand that profit = profit/car * volume of cars sold? And it costs the dealer money for the time they hold the car. Am I missing something here or is greed the driving force?
