changing the oil and draining the gas tank. But I'm not really sure it matters a whole lot. Nowadays, I put in some gas stabilizer in the big gas can when I get gas, so my gas is always good anyway. I just leave the mower at the end of the winter, although I try to change the oil. I put in a new spark plug every other year.
I say I'm not sure it matters because the thing always starts in the spring on the 2nd or 3rd pull and runs fine. Unless it is fancy Honda or Ariens , mowers are somewhat (and unfortunately ) disposable anyway. Most people never seem to get more than a few years out of them before something dies, especially the self-propelled ones. There are always 3 to 6 dead ones at my local dump every week.
