I get my fires started with newspaper and pine/spruce kindling which I've made from splitting used construction lumber. Then I burn hardwoods such as apple, oak, or birch. (all stuff cut in my own yard.) Kindling is leftover wood from my house construction and from shop projects.
I think the primary danger in burning softwood in an open fireplace is that it crackles and pops more often and more violently than hardwood. Thus embers could land outside the safe perimeter of your fireplace. A screen will help with this. I think most fireplace users probably don't use the fireplace enough to grubby up the chimney bad.
I would personally not cook over fake logs.
