I was an elite cylist for several years and the Canadian National team doctor advocated about a 70-20-10 diet (crazy to most people these days!), but later started to up the protein and fat. however we were injection several thousand calories a day, so even with that we were getting adequate protein intake, and still losing about 10 lbs over the course of a long season (for me that was 6foot2 inch at 175 doen to 165lbs) You will still see top professional cyclists including Armstrong with a VERY low fat intake overall. With top endurance athletes you will not see much evolution in diets, except in the illeagal supplement department:-)
Supplements, I tend to agree. I used to supplement vitC and Bs, and Ds, and the occasional B1 in the bum. That's it. We were given iron boosters in belguim on one project about 8 years ago. HTat is antiquated procedure, that's for sure! I doubt i needed it. no magic there although i wished for magic on many 20-25hr weeks in the middle of winter!
