I agree that 5-stars is not all that there is to safety. I remember reading somewhere that the earliest 9-5 received safety ratings that weren't as favorable as one might think (based on their safety record). If I recall correctly, it was due to foot trauma in a head-on. The test dummy was placed with its foot on the gas, even though you're more likely to be standing on the brakes immediately before a collison...and the Saab brake pedal was designed to prevent such an injury (I don't recall the source of this info right now).
Anyway, if car companies start to design their safety around the National Tests, then they might loose sight of the real-world safety considerations. Saab, on the other hand, seems to design for real-world safety and, in turn, always seems to do just fine in safety tests. (The 9-3 and 9-5 are "the safest cars in sweden" based upon actual accident/injury data and recently released by Folksam, a swedish insurance company.
And good point about bad brakes an/or poor stability. The best way to stay safe is to stay out of accidents...and a good-handling car that goes and stops really well (As well as a properly trained driver) will be the best defense against being involved in an accident.
