but that shouldn't be a problem on the rooftop, stick a small red flag on the back end to be legal (Illinois law, yours may vary). I had a Laser (small monohull), but rented many Hobies over time.
There are different small Hobies, but one that is being discarded is probably an old one, which I believe can be disassembled fairly easily - you may have to untie (or cut out) the "trampoline" to get the cross pieces off, but chances are the line needs to be replaced anyway. Corroded hardware may slow you down, bring what you need to deal with this - I don't think that these pieces are riveted together.
Yes, a Hobie is more difficult to sail than a monohull boat of similar size, particularly coming about. The 16s have a jib which you can counter rig to help pull the front end around, 14s don't have this but they weigh less.
