It is very possible with a 14 footer. The whole boat probably weighs about 200 lbs. The hulls unbolt is about 5 minutes. If you can the best thing is to leave it at the beach where you plan on using it. You can remove the block and sails. Most place are cheap for Hobie cats because they don't take up water space and you only need about 15 feet of beach to launch. The fourteen is ok for a starter boat, when you get better you probably want to upgrade to a sixteen, they're alot faster and a hell of alot more fun. I sold my 16 about 6 years ago and sometimes I miss it, I just don't have the time anymore. Good luck and enjoy the new toy and always wear a life preserver you will probably end up in the water just as much as your on the boat.
