three phase is 120 degree apart. 240 in the US is two opposite (180 degree) phases of 120v. 208v is two 120v phases 120 degrees apart. Even though 240 is technically two phases, it is derived from a single phase high voltage line and the tranformer is center tapped to provide the two 120v lines. 180 degrees is more opposite than 120 degrees, thus the higher voltage of 240v versus 208. 3 phase is usually 3 120v (or other voltage) phases and a ground.
We have a three phase generator, utility hookup, and air conditioning at work. They just dont make many generators single phase in the size we needed, and that was more important than anything, so we went three phase all the way.
