I usually go for where the animal was (the spinning race car theory), but have had coons, squirrels and porkies turn and run back in front of me, which a spinning car usually doesn't do. Coyotes and fox are better--maybe being predators with binocular vision helps them.
And yes, deer are incredibly agile. They easily can do a standing jump of over three feet vertical and twelve feet in distance if the tracks in my front yard last winter are anything to go by. From the street, over a stone wall and snowbank, landing in the front yard, 12 feet away. Tracks indicated s/he walked up, jumped and landed. Amazing!
