There is one bike that will do it all, a GS from BMW. I definitely recommend dirt experience to round out your street experience. You have to experience the physics of motorcycle handling beyond the friction zone which can't be done on pavement. It's once you lose traction that the experience pays off, and that can only be accomplished in the dirt.
The greatest all around motorcycle in the world is the BMW GS1200, dirt, street, touring, two up, it'll do it all in style and comfort, but I don't think it should be a 1st mototcycle. Make it the GS650 and you'll be right or any of the medium displacement dual-sport bikes from Honda-Yamaha-Kawasaki-Suzuki.
Here's a dirty little secret. The big hogs are some of the easiest bikes to ride. A big hog is easier to ride then a sporty. If it's hog glory your after go big right away, but still get another bike you can thrash in the dirt.
