Was there at beginning and end of a trip to Ajijic on Lake Chapala (boring) and San Miguel de Allende ("SMA" - a fabulous favorite place). As for "Guad," Casa Fuerte in Tlaquepaque is a terrific restaurant and Tlaquepaque was fairly deserted, tourist hordes-wise. The Tonala street market area is interesting if you like that kind of scene, but avoid Thursday (and IIRC Sunday) when driving in the traffic is horrible (voice of experience).
Overnighted the last night before flying home at the Fiesta Americana Hotel in the zona turistico (at the Minerva fountain). Starbucks and Burger King next door for homesick gringos, or a couple of good local restaurants facing the fountain - one Mexican and one Argentinian grill.
We ate everything put in front of us in a variety of restaurants in all three towns, including margaritas con roques (ice cubes), as well as fresh salsa. Not a hint of any discomfort. Definitely stuck to bottled water though, including for tooth-brushing. But,... an acquaintance in SMA told me he had a purified water system installed in his house, then took a sample of his purified tap water and a sample from a bottle of "Ciel" brand bottled water to a lab up the road in Guanajuato. The lab told him his tap water was much purer than the stuff from the store. Go figure....
Anyway, enjoy. Como Mexico, no hay dos.

P.S. Only saw two Saabs on the whole trip. One was a very new 9-3SS with MExico CIty plates, parked in a car park in SMA. The chin spoiler was half knocked off and the remaining half hanging by a thread.
